Paris is the Eiffel Tower. It’s also the Seine and the Louvre. And mimes and Breton stripes. And, finally, Paris is its crepes, the crowning glory of French cuisine.
This iconic French pancake is found on every street corner in Paris. One of my fondest memories of the City of Lights is standing by the Eiffel Tower, a coffee in one hand and a crepe in the other. Looking up at the iron behemoth that is synonymous with Paris, I remember licking streams of Nutella off my arm feeling tres parisienne. Whether they are dunked in Nutella, the way I like them, or wrapped round a sausage, crepes are a must try on every French holiday.
Make crepes like a Parisian with this easy recipe.
Here’s What You Need
• 1½ cups milk
• 3 eggs
• 1 cup flour (maida)
• 1 ½ tablespoons of sugar
• 2 tablespoons of melted butter
• A small pinch of salt
What to do
Add all the ingredients in a blender till smooth and lump free.
Let it stand in a refrigerator for an hour.
Warm a skillet or tava to medium hot.
Grease with butter.
Pour a ladleful of batter and spread to a smooth circle like a dosa.
Flip when cooked, to the other side.
Remove from the skillet when golden brown and done.
Voila! Your French cuisine 101 is now complete!
Sweet crepes and generally folded into a triangle while savoury ones are rolled like a cigar. Also, for the savoury crepes, do not add the sugar. The skillet must be greased before cooking each crepe.
Choice of toppings
Sweet: Nutella & sliced banana, jam, chocolate sauce, fruit with drizzled sauce, etc
Savoury: eggs and bacon, chicken burji, ham & mushroom, etc
